Whole-grain sourdough bakery and coffee cafe, known for in-house stone-milled flour and signature toast.
The Mill is a bakery and cafe operating as a joint venture between Josey Baker Bread and Four Barrel Coffee. The bread program centers on whole-grain sourdough loaves, baked in-house using flour stone ground on-site from organic ingredients. The signature menu is built around toast: thick slices of house-baked bread topped with options ranging from cinnamon sugar and almond butter to avocado mash, smoked trout, and ricotta with in-house seasonal jam. Four Barrel Coffee handles the cafe side, offering espresso drinks, drip, cold brew, nitro, and whole-bean bags sourced from farms in Kenya, Ethiopia, Rwanda, Guatemala, El Salvador, and Nicaragua. Pastries come from two partner bakeries, Loquat and Compagnon, and include croissants, babka, cookies, galettes, and seasonal cakes. The Mill also sells its fresh-milled flours by the bag for home bakers.
All bread ingredients are organic, and the whole grain flour used in baking is stone ground in-house at The Mill. Bread recipes rely on a sourdough culture rather than commercial yeast. Whole milk for drinks comes from Double 8 Dairy in Point Reyes, CA. The oat milk option is Minor Figures Oat. Four Barrel Coffee beans are sourced directly from named farms and origins across East Africa and Latin America.
