Fourth-generation family farm producing raw milk, Jersey beef, Berkshire pork, and Boer goat meat with an on-farm creamery and country store.
Kilgus Farmstead & Country Store is a fourth-generation family farm in Fairbury, Illinois with roots going back to 1958, when Duane and Arlene Kilgus established Kilgus Dairy. Today four family units work together to produce, market, and distribute dairy and meat products from the same land. The farm milks 160 registered Jersey cows, raises approximately 140 Jersey steers for beef, about 500 Boer goats for meat, and around 150 heritage Berkshire hogs for pork. Products are sold directly from the on-farm Country Store, which includes a viewing window into the bottling creamery, and are also distributed to retail stores and restaurants across Illinois. The farm offers guided tours of its animals and milk-bottling operation, and hosts seasonal events. Learn more on their About Page.
Kilgus Farmstead practices seasonal rotational grazing for its Jersey dairy herd from April through late November, moving cows to a fresh paddock every 24 hours across 17 grazing paddocks planted with rye, orchard grasses, and clover. No chemicals are sprayed on the pastures. During winter and as a summer supplement, cows are fed a mixed ration of non-GMO corn silage, grass hay, and alfalfa hay, all grown by the Kilgus family. Cows also have access to a compost bedded pack barn where they can roam freely on deep soft bedding. Milk is bottled on-farm in the attached creamery and sold as non-homogenized. Jersey steers are raised in open pens and fed non-GMO corn and corn silage grown exclusively by the Kilgus family. Boer goats are fed a diet high in the farm's own non-GMO corn. Berkshire hogs are farrow-to-finish on the farm and fed a diet of non-GMO corn grown by the Kilgus family. Meat animals are raised on a corn-based diet rather than pasture.
