Independent, women-owned sourdough bakery baking breads, pastries, and sandwiches from organic, stone-milled grains.
Hewn is an independent, women-owned bakery co-founded by Ellen King and Julie Matthei. Ellen King, a classically trained chef and Director of Baking Operations, oversees all baking. Her first book, Heritage Baking, was published by Chronicle Books in 2018. The bakery makes naturally leavened sourdough breads, pastries, and savory goods, all mixed, shaped, and scored by hand. Rotating breads include Turkey Red, Spelt, Caramelized Onion Rye, Challah, and Evanston Red, baked Tuesday through Sunday. Pastries range from croissants and brioche to scones and seasonal treats, all made with high-fat European butter. Hewn also offers hot and cold sandwiches on its own artisan bread, a full espresso bar featuring Ruby Coffee, and catering. A pantry goods line called Middle Child, starting with pancake mix and granola, is also produced under the Hewn umbrella. Learn more on their About Page.
The sourdough starter, created by Ellen King, is maintained daily. Loaves are naturally fermented using only flour, water, salt, and time, with no commercial yeast, preservatives, conditioners, or additives. Dough is hand-turned every 30 minutes over four hours, shaped, and rested overnight for about 20 hours of fermentation. Flours are organic, stone-milled, and sourced from Illinois and Wisconsin farms. Janie's Farm and Mill grows organic grains in east central Illinois, Meadows Lark Farm and Mill supplies bolted and whole wheat flours, and Hazzard Free Farm grows heirloom grains without GMO seeds or chemical pesticides or herbicides. Heritage varieties include Turkey Red, Red Fife, Spelt, and Evanston Red. Kilgus Farmstead, a multi-generational Illinois dairy, pasture-raises Jersey cows and bottles its own milk. Mick Klüg Farms supplies seasonal produce to Chicago-area markets. Interior wood was reclaimed from Evanston Rebuilding Warehouse and Horrigan Urban Forest Products.
