Hewn is an independently owned, women-owned bakery co-founded by Ellen King and Julie Matthei. It bakes naturally leavened sourdough breads, pastries, and savory goods from scratch, with all baking originating at its Evanston bakehouse. The bread lineup rotates across the week and includes heritage-grain varieties such as Turkey Red, Spelt, Rye, and Challah alongside everyday country and whole wheat loaves. Pastries range from croissants and brioche to scones, muffins, and laminated doughs, all made with high-fat European butter. Hewn also serves hot and cold sandwiches on its own bread, a full Ruby Coffee espresso bar, and offers catering. Every Hewn loaf is hand-mixed, hand-shaped, and scored without commercial yeast, preservatives, conditioners, or additives. Co-owner Ellen King created the sourdough starter, which bakers feed daily. Each bread ferments for roughly 20 hours. Bakers turn the dough by hand every 30 minutes over four hours, then let it rest overnight in bannetons. Hewn sources stone-milled organic flours mainly from Illinois and Wisconsin, working directly with partners: Janie's Farm and Mill (certified organic grains, east central Illinois), Meadows Lark Farm and Mill (freshly milled bolted and whole wheat flour), and Hazzard Free Farm (heirloom and open-pollinated grains grown without treated or GMO seeds, chemical pesticides, or herbicides). Hewn also partners with Kilgus Farmstead, a multi-generational Illinois dairy that pasture-raises Jersey cows, and Mick Klüg Farms, a family-run Illinois fruit and vegetable farm.
