Regeneratively raised, grass-finished beef, goat, and lamb from a multi-generational Texas ranch.
Heritage Beef is a family operation run by Marcy and William Epperson, along with their sons Virgil and Wendell, on a ranch near Rocksprings in the Texas Hill Country. Their families have ranched in Edwards County since 1879, and the current ranch was purchased by William's great-grandfather in the early 1900s. The farm raises grass-finished beef, goat, and lamb, selling individual cuts as well as larger shares including quarters, halves, and whole animals. Beef jerky, beef snack sticks, and sausage are also available. Heritage Beef offers wholesale pricing to farm-to-table restaurants as well.
Heritage Beef follows regenerative ranching principles, with priorities on soil health, biodiversity, and ecosystem services. The team uses prescribed fire and targeted grazing with specific species as management strategies, and works livestock on horseback using low-stress handling methods. The primary cattle breed is Corriente, a type of Criollo cattle originally brought to the Americas from Spain in the late 1400s; the ranch's founding Corriente/Criollo stock came from the Sierra de Durango, Mexico in the early 1990s. Akaushi (Wagyu) genetics have been added to develop a second beef line with increased marbling from cattle with similar hardy characteristics. Goats are a Spanish/Boer cross, and the sheep are Dorper cross raised for meat.
