Broken Arrow Ranch is a second-generation family business that has been field-harvesting and selling truly wild game meat since 1983. We offer free-range venison, wild boar, Texas quail, wild game sausages, and farmed venison, serving both individual customers and restaurant chefs. The concept of field-harvesting and processing truly wild venison was pioneered by founder Mike Hughes, who built lasting relationships with chefs in cities like New York and Chicago. Today, Chris and Maeve Hughes carry that work forward, supplying customers who seek meat free from synthetic hormones, bulk livestock feed, and other additives. We sell to individual households and wholesale to restaurants across the United States.

We use a field-harvesting method: mobile meat processing units travel to private ranches and harvest animals on-site under the inspection of a government meat inspector. We work with wildlife ecologists, ranch owners, and managers to identify over-populated herds on private land across Texas, using selective harvesting to improve the health of the herd and land. After field harvest, the meat undergoes a double-aging process to tenderize it and enhance flavor before being butchered and packaged. Animals are free-range and truly wild, raised with no synthetic hormones or added human inputs. The rancher is paid for every pound harvested.
