Grass-fed, dry-aged beef from a Cowichan Valley farm, raised on pasture and sold direct.
Henry Farms is a family-run property in the Cowichan Valley, purchased in 2004 and developed into an operation focused on 100% grass-fed beef. The farm includes over 20 acres of fenced grass forage, a market garden, wine grapes, and a small raspberry planting. The owners bring agricultural backgrounds to the work: one holds a Bachelor of Science in Agriculture from the University of Manitoba and worked as a Professional Agrologist before turning to full-time farming and consulting on Vancouver Island. Beef is sold direct to customers, with a satisfaction guarantee based on flavor, juiciness, and tenderness.
Henry Farms raises Red and Black Angus cattle selected for suitability to Vancouver Island pasture conditions, with a focus on forage quality and cattle genetics to produce beef of consistent eating quality. The farm practices low-stress cattle handling, and stress reduction during transport and before processing is treated as a factor in beef tenderness. All beef is dry-aged for 21 days in a temperature-controlled hanging room, a process the farm says concentrates flavor and allows natural enzymes to break down connective tissue. Only young cattle are selected for beef, which the farm notes further enhances tenderness.
