Family-owned indoor specialty mushroom farm using bottle cultivation to grow fresh gourmet mushrooms year-round.
Green Box Mushrooms is a family-owned indoor specialty mushroom farm opened in June 2019 and operated by husband-and-wife team Elizabeth and John Moon. The farm operates out of a 30,000 sq. ft. facility with climate-controlled growing rooms that maintain precise air, temperature, and humidity conditions. Its primary product is fresh Oyster Mushrooms, with additional varieties such as Lion's Mane, Chestnut, King Trumpet, and Beech Mushroom also in its lineup. The farm also offers a Sanghwang mushroom powder and a Grow-to-Order Partnership program designed to help small farmers grow and sell specialty mushrooms. Green Box Mushrooms describes itself as the only bottle cultivation indoor farm in the Southeastern United States. Learn more on their About Page.
Green Box Mushrooms holds USDA Organic, Certified Naturally Grown, and HGAP+ certifications, and produces non-GMO mushrooms. The farm carries out the full cultivation cycle on-site in Gainesville, Georgia, from creating the mycelium over a six-week period through substrate preparation, sterilization, inoculation, incubation, and final harvest. Substrate is prepared using local agricultural by-products and agri-waste, and the plastic-free bottle cultivation process reuses recycled bottles rather than discarding them. Spent substrate is converted into organic compost sold to land farmers, keeping production waste out of the waste stream. The growing rooms run year-round, and mushrooms are harvested approximately ten days after entering the growing room.
