Foxhollow Farm is a 4th-generation family farm on 1,300 acres that has been in continuous operation since 1960. The farm's core product is 100% grassfed and grass-finished beef, raised on Demeter Certified Biodynamic pastures. Alongside beef, Foxhollow sells pasture-raised pork, chicken, lamb, bison, seafood, and bundled meat boxes, available through its on-farm Foxhollow Market and for direct purchase online. The herd of approximately 550 cattle is a closed herd, meaning every animal is born on the farm's own pastures. Foxhollow Farm holds three certifications: Demeter Certified Biodynamic, AGA Certified (American Grassfed Association), and Regenified Tier 5. Its 720 acres of pasture are managed without petroleum-based fertilizers, pesticides, herbicides, or fungicides. The farm uses a rotational grazing system, moving the herd between pasture sections to allow regrowth. Soil fertility is maintained with compost made from the herd's own manure, straw, and hay, as well as biodynamic preparations and compost teas. The herd is raised without growth hormones, grain finishing, or routine antibiotics. Derek Lawson, head herdsman, breeds cattle suited to Kentucky's climate, and the closed-herd model limits exposure to outside pathogens. All animals are processed at a USDA-inspected facility.
