Behind the Oaks Farm is a small family farm run by Zachary and Samantha Platt and their five children in Schertz, Texas. We raise grass-fed beef, pasture-raised chicken, turkey, pork, and eggs using regenerative farming practices. Our products are available through our on-farm store, Thursday and Saturday pickup hours, weekly deliveries to surrounding areas, and at farmers markets in San Antonio and New Braunfels. We also offer CSA subscriptions and compost through our online store. Our goal is to restore the connection between people and their food, knowing where it comes from and how it was raised.

We use multi-species intensive grazing, rotating animals constantly across pastures so they can restore the soil through natural foraging, manuring, and hoof action. Our grass-fed beef is humanely managed with rotational pasturing. Pork is raised in silvopastures, rotating and foraging under live oak trees, and supplemented with a custom non-GMO, corn- and soy-free feed along with fruits, vegetables, and whey sourced locally. Broiler chickens are moved daily in a chicken tractor for fresh forage and fertilization, and turkeys are raised under oak tree canopies with rotational grazing; both are fed a custom non-GMO, corn- and soy-free feed. We run a closed-loop compost operation, receiving food scraps via Mission Compost, wood chips from a local arborist, and whey from River Whey Creamery, and make finished compost available for purchase.
