MADDPASTA NBTX is a local pasta maker producing small-batch pasta from freshly milled organic heritage grain durum. Our pasta is made with just two ingredients: durum and water, no eggs and no oils. We offer a range of shapes, including tagliatelle, orecchiette, fusilli, campanelle, radiatori, vesuvio, and more. Flavored varieties include black garlic, chili, lemon pepper, poblano and garlic, and spirulina, among others. Because we start with freshly milled grain, our pasta is higher in protein and has a lower glycemic index than conventional dried pasta. We also carry a freeze-dried caprese salad alongside our pasta lineup.

We use only freshly milled, organic heritage grain durum in all of our pasta. Every pasta contains no eggs and no oils: just durum and water. For our flavored pastas, we use only organic fruits and vegetables to deliver natural color and flavor, and we prioritize locally sourced ingredients. All of our pasta shapes are cut by hand with the help of bronze dies, which produce a coarser surface texture that helps sauces cling to the pasta.
