Shy Coyote Farm is a small-scale vegetable production farm established in 2022, run by Maggie Baker and Josh Pitney. Together they bring decades of combined experience in agriculture, natural resource management, environmental education, and livestock husbandry. The farm grows a wide variety of seasonal vegetables from heirloom varieties, alongside fermented goods like kimchi and sauerkraut, herb salt mixes, microgreens, and eggs from a free-range flock. You can find Shy Coyote Farm at the New Braunfels Farmers Market and the Sunset Ridge Farmers Market in San Antonio every Saturday. Home delivery boxes are also available on Wednesdays to addresses inside Loop 1604 in San Antonio. The farm also supplies select local restaurants and pop-ups.
Shy Coyote Farm grows all crops from seed using non-GMO, heirloom varieties. The farm has a composting program, mixes its own soil, and relies minimally on outsourced organic inputs. While not certified organic, the farm follows the same standards and goes further: no chemical fertilizers or pesticides are used, and the farm does not grow any GMO crops. Planting and seeding are timed according to the Biodynamic calendar. The farm also incorporates JADAM and Korean Natural Farming (KNF) strategies. Chickens are free-range and well-kept, with their manure used as an on-farm fertilizer. Improving soil quality and promoting ecological health are stated priorities of the operation.
