Trelio Food & Wine is a New American fine dining restaurant in Old Town Clovis, known for its inventive approach to localized cuisine drawing techniques and inspiration from cuisines around the world that share a similar climate. The restaurant has been a staple in the Fresno area for nearly 30 years, with the last two decades under the ownership of Chef and Sommelier Chris Shackelford and family. The kitchen is headed by Chef de Cuisine Ross Verzosa. Dinner is served as a five-course prix fixe, with choices offered at each course. Gluten-free, dairy-free, vegetarian, and vegan dishes are accommodated, and other special dietary needs can be addressed by calling ahead. Beyond the main dining room, Trelio also offers private dining, catering, banquets, and a wine club.
The five-course prix fixe menu is built around the offerings of farmers markets, butchers, dairies, and foragers, and can change depending on the availability of ingredients. The wine list holds over 500 selections from around the world, spanning styles from light and sweet to powerful and dry. The list is compiled by Beverage Director Gary Darakjian and Chris Shackelford. The dining room team are acting sommeliers, with most certified through either the Court of Master Sommeliers or the Wine and Spirits Educational Trust.
