O'ahu's only all-local, full-service whole-animal butcher shop and bakery in Kaimukī.
The Local General Store is a whole-animal butcher shop and bakery operating out of Kaimukī. It was founded by butcher Jason Chow and baker Harley Tunac Chow, who together built a shop devoted to Hawaiʻi's food system. The butcher counter offers cuts, charcuterie, sausages, and house-made products not typically found in supermarkets. The bakery side specializes in pastries made with locally grown and harvested fruits and vegetables, from croissants and Danishes to seasonal creations that reflect what local farmers are producing. The two sides of the shop operate side by side, giving customers access to both fresh meat and baked goods in a single stop. Learn more on their About Page.
The Local General Store runs a whole-animal butcher program that sources meat from local farms across Hawaiʻi. By working directly with those farms, the shop aims to increase the accessibility and sustainability of Hawaiʻi's food system. Whole-animal utilization is central to the butchery: trimmings and bones become sausages, pâté, stock, and other prepared products, minimizing waste across the animal. On the bakery side, pastries rotate based on what the business can source from local farmers, with locally grown and harvested fruits and vegetables featured throughout the menu.
