Shirttail Creek Farm is a family-run regenerative farm operated by Sam and Carolynn Moffett and their small team. Founded in spring 2017 after the Moffetts left careers in Austin to settle on the farm, our focus is on producing real, unadulterated food as an alternative to the supermarket. We raise 100% grassfed and finished beef, pastured pork, pastured chicken, and pastured eggs. Our beef is grown and finished on grass without the use of any grains. Regenerative farming is the foundation of everything at Shirttail Creek Farm. Each fall, we plant a mixture of winter grasses (oats, wheat, ryegrass), legumes (vetch, clover), and brassicas such as daikon radish. Grasses build root systems that sequester carbon, legumes pull nitrogen from the atmosphere to naturally fertilize, and root vegetables release nutrients into the soil as they break down. In summer, we plant season-appropriate grasses and legumes. Our cattle are managed under an intensive rotational grazing program, moving to fresh pasture each day and then resting that section for 5-7 weeks. Broiler chicken tractors are moved daily for fresh pasture and even manure distribution. Pigs rotate into new large paddocks in wooded areas every few weeks. Laying hens are moved weekly on a rotating schedule that coordinates with cattle grazing: where hens graze in summer, we plant winter forages for cattle, and vice versa. No factory farming is used.
