Certified organic vegetable farm growing vegetables, herbs, microgreens, and starter plants.
Salad Days Farm is a small-scale, certified organic vegetable farm founded in 2015 by Maggie and Jarrod Dungan. Maggie, a first-generation farmer, runs the farm full time; Jarrod, who grew up farming conventionally, farms alongside her when not working in Lexington. The farm grows a diversity of vegetables, herbs, starter plants, and microgreens on 2 to 4 acres of a 30-acre property. Products are sold at the Lexington Farmers Market, the Franklin County Farmers Market, and to local restaurants and schools. Learn more on their About Page.
Salad Days Farm holds USDA Organic certification and is also GAP (Good Agricultural Practices) certified, an audit-based food-safety credential it voluntarily pursues to demonstrate that small-scale farms can serve all market levels. The farm uses intensive, sustainable growing methods with mechanization kept to a minimum to maintain a close connection to plants and soil. Conservation practices include minimal tillage, cover cropping, and active encouragement of a beneficial ecosystem of insects, microbial life, and wildlife. Only 2 to 4 acres of the 30-acre property are used for production, allowing a focus on quality. The farm also applies Lean principles to eliminate waste and inefficiencies across all aspects of its operation.
