Pasture-raised, dry-aged Scottish Highland x Longhorn beef, direct from a family cattle ranch.
Nohava Ranch is a family-owned and operated cattle ranch founded in 1996 in Iowa, now spanning operations in Northwest Iowa and Eastern North Dakota. The ranch raises a Scottish Highland x Texas Longhorn cross, a breed pairing selected for hardiness, marbling, and tenderness. Cuts include steaks (ribeye, New York strip, sirloin, filet mignon, and flat iron), ground beef, beef patties, roasts, and beef tips, as well as jerky and beef sticks. Beef is also available in quarter, half, and whole portions. Customers can purchase individual cuts, curated boxes, or subscribe to the Nohava Ranch Reserve, a recurring subscription that ships a rotating selection of beef every 45 days in four box styles.
Nohava Ranch cattle spend their lives on open pasture. Just before harvest, the ranch offers them a free-choice, homegrown blend of corn and oats sourced from neighboring Iowa and North Dakota farms, while the animals continue grazing pasture. The ranch does not administer added growth hormones, steroids, or mRNA vaccines to its cattle, and does not routinely use antibiotics. After harvest, all beef is dry-aged for a minimum of 14 days in a temperature- and humidity-controlled environment to develop tenderness and flavor. Ground beef is single-cow-origin and flash-frozen in vacuum-sealed packages. Orders ship nationwide in eco-friendly insulated coolers with dry ice.
