May's Honey Farms: raw wildflower honey from an apiary with 1,400-plus hives across northern Illinois and southern Wisconsin.
May's Honey Farms has been producing Sunny Hill Honey since 1948, starting with just two beehives purchased in Palatine, Illinois. The operation now runs more than 1,400 beehives across six counties in northern Illinois and southern Wisconsin. All honey is harvested within 50 miles of the Marengo, Illinois processing plant, a converted 1898 one-room schoolhouse. The honey comes from local wildflowers including white sweet clover, yellow sweet clover, Dutch clover, alfalfa, and Lynden blossoms. Sunny Hill Honey is sold throughout the Chicagoland area at independent grocers and fresh produce retailers, and is available in sizes ranging from a 12-ounce squeeze bear to an 80-ounce plastic jug, as well as five-gallon pails.
May's Honey Farms uses the same extraction process it has followed since 1948. Full honeycomb frames pass through an uncapper to remove wax capping, then go into an extractor where centrifugal force pulls the honey from the combs. The honey flows through a series of baffles to separate and remove excess wax, is warmed to approximately 110 degrees in a holding tank, and is then pumped through a simple nylon cloth into filling tanks. The honey is never overheated, pressure filtered, or mixed with additives, and nothing is added at any stage of processing.
