Overview
Permaculture-inspired farm offering CSA shares, a seasonal farm stand, farm-to-table dinners, and cooking classes in the Yampa Valley.
Elkstone Farm is a permaculture-inspired farm in Strawberry Park that has been growing vegetables, fruits, and herbs since its greenhouse was completed in 2009. It offers seasonal CSA shares, a summer farm stand stocked with produce, baked goods, preserves, condiments, herb blends, and teas, and a line of kitchen and body care products made from farm-grown ingredients. Chef Russell Goodman leads intimate farm-to-table dinners, including a five-course Farm Dinner for up to 16 guests and a seven-course Chef's Table for up to eight guests, both drawing on ingredients from the farm and the broader Yampa Valley. The farm also hosts cooking classes, guided tours, yoga, weekend workshops, and a Permaculture Gardeners' Club, and holds an annual sale of compost, potting soil, and seedlings for local home gardeners.
Elkstone Farm designs its growing spaces according to permaculture principles, using a whole-systems approach focused on soil health, water quality, and biodiversity. Its growing environments include three passive-solar hoophouses for seasonal vegetables grown in an organic gardening style, a climate-battery greenhouse that maintains a subtropical climate for citrus, figs, herbs, and edible flowers, a fruit forest with apple and pear trees, currants, and gooseberries, and an agroforest that integrates trees, shrubs, and perennial crops using swales to manage water on contour. The farm stand offers organically grown produce. Seeds are started in a dedicated seedhouse as early as February, and herbs are dried and blended on-site for teas and custom herb blends. The farm describes its agricultural ecosystem as regenerative, designed to evolve and adapt over time.
