Dayspring Dairy is Alabama's first and only sheep dairy, owned and operated by husband-and-wife team Greg and Ana Kelly. The farm produces award-winning sheep milk cheeses, sheep milk dulce de leche caramel, shortbread cookies, and jams and fruit butters. The Kellys purchased their Gallant farm in 2011, completed their dairy and creamery in 2012, and became fully licensed the following year. Products are available through the farm's online shop, and customers across the country have been purchasing from Dayspring Dairy for over a decade. Learn more on their About Page.
Dayspring Dairy's cheeses begin with milk from the farm's own flock of dairy sheep, which graze on pasture year round. The farm uses locally grown fruits, chili peppers, and herbs as much as possible to flavor its cheeses. All fruit butters and jams are made exclusively with fruit sourced from Alabama and Georgia, chosen when fully ripe to maximize flavor while supporting regional growers.
