CT Wagyu is a small family farm operating at Oberon Farm in Preston, Connecticut. The farm raises Fullblood Japanese Black (Kuroge Washu) Wagyu cattle, with a breeding herd composed of Fullblood and percentage Wagyu animals. Individual cuts, farm shares in whole and half sizes, and holiday gift boxes are available for purchase. CT Wagyu raises Fullblood Japanese Black Wagyu, the breed recognized for producing consistently high marbling. The farm uses a cellphone-based carcass camera system to grade each animal's beef marbling score (BMS) at harvest, and audits those results with physical BMS flash cards. Feed sourcing is a stated priority: the farm purchases non-GMO chicken feeds and sources corn and soy for custom Wagyu rations from a local grain farm that also mills its own feed. Hay is also sourced locally, with the farm noting that approximately 98% of its feed is grown within 30 miles of the farm. Wagyu cattle are finished on a chocolate-fed ration, as reflected across the product line. Percentage Wagyu animals are used as embryo recipients alongside local dairy cows to help grow the Fullblood herd.
