Fifth-generation ranch raising and dry-aging beef on the northeastern Colorado plains
Colorado Craft Beef is a fifth-generation ranching operation turned direct-to-consumer beef company, founded by Kara and Jeff Smith on land Kara's ancestors first settled in 1913. The ranch raises cattle on the open grasslands of Northeastern Colorado and handles every stage of the process: raising, finishing, harvesting, dry aging, packaging, and shipping. Products include beef boxes (burger, griller, variety, and NY strip options), all-beef snack sticks, beef tallow for cooking, and a whipped tallow balm. A monthly subscription called the Steakholders Club gives members recurring beef selections. Colorado Craft Beef also runs a butcher block offering and a podcast, Steak Bites, focused on ranching and beef. Learn more on their About Page.
Cattle spend most of their lives on open pasture, with a focus on animal welfare, land stewardship, and responsible ranching practices. For finishing, they are fed a grass and grain ration developed to support both animal health and eating quality. The entire journey from ranch to harvest, processing, and fulfillment stays within a 40-square-mile area in Northeastern Colorado. Colorado Craft Beef owns the USDA-inspected facility where cattle are harvested and beef is processed. After harvest, all beef is dry aged for 21 days before packaging. Cattle work on the ranch is done on horseback. The business grazes with intentional land management and rotates grazing to rest the ground, practices the ranch describes as rooted in the semi-arid character of the land.
