Overview

Connecticut farmstead raw milk cheese made by hand from a Jersey cow herd.

Cato Corner Farm is a 75-acre family farm owned and managed by the mother-son team of Elizabeth MacAlister and Mark Gillman. Liz began making cheese in 1997, starting with 13 cows and selling at farmers' markets; Mark joined the operation in 1999 and now oversees cheesemaking, aging, and the wholesale business. The farm produces a lineup of raw milk aged cheeses, all made by hand on-site, with varieties ranging from mild and semi-soft to pungent washed-rind and firm styles. Cheeses are aged in an underground cave on the property. A pasteurized cheese line, focused on younger and softer styles such as bloomy rinds and mozzarella, is also part of the current offering. Cheese is sold at the on-farm shop, at farmers' markets, and through national mail order.
