University-run farmstead creamery producing award-winning cheese and ice cream since 1903.
Cal Poly Creamery is a farmstead creamery and licensed commercial dairy facility operating within California Polytechnic State University. It has been producing cheese, ice cream, and other dairy products since 1903, with all products made by Cal Poly students under faculty and staff supervision. The creamery's herd of Holstein and Jersey cows is kept on university grounds directly across the street, supplying all the milk used in production. Cheese varieties include Highland Cheddar, White Cheddar, Triple Cream Brie, and Grand Gouda, while ice cream is offered in multiple rotating flavors. Products are available at a weekly Friday drive-thru, in select local markets, and through cheese gift boxes shipped nationwide. Learn more on their About Page.
Cal Poly Creamery's products are classified as farmstead, meaning all dairy comes from the university's own on-site herd rather than outside suppliers. The herd is composed of equal parts Jersey and Holstein cows. Jersey milk is noted for its higher levels of protein, calcium, and butterfat compared to other breeds, contributing to a richer flavor profile in the finished products. The creamery operates as both a teaching laboratory and a State of California-licensed and inspected commercial production facility. Students participate in every stage of the process, from milking and animal care through manufacturing, packaging, marketing, and sales, guided by the university's 'Learn by Doing' philosophy. The creamery also works with industry-leading equipment partners to ensure students train on the same technology used in commercial dairy operations.
