Illinois family farm growing organic, non-GMO heirloom grains, flours, and baked goods from seed to mill.
Brian Severson Farms is a fifth-generation family farm in Illinois growing organic, non-GMO grains. Unsatisfied with the direction of modern agriculture, Brian Severson began experimenting with organic methods and raised the farm's first certified organic sweet corn in 2007. The farm has since expanded its crops to include heirloom and heritage varieties of wheat, corn, oats, popcorn, field peas, soybeans, buckwheat, and beans. Brian selects varieties primarily for taste, which frequently leads back to older and heirloom types. The farm also produces sourdough bread and other baked goods, and its grain products are sold in restaurants and stores across the region. Learn more on their About Page.
Brian Severson Farms handles every step of production on the farm: planting, tending, harvesting, storing, cleaning, packaging, milling, and baking. The farm grows without synthetic chemicals, using cultivation and hand-weeding in place of pesticide applications. Grains are grown in a multi-year crop rotation, and each variety is stored separately to preserve its individual characteristics. When supply runs low, the farm cleans grain through a series of sorting machines before milling it on a stone grist mill and roller mill. The farm saves its own seed whenever possible and favors heirloom varieties that predate modern commodity agriculture.
