Allicins Ranch is a certified organic garlic farm operated by Ben and Claire Ronniger on a bench above the Kootenai River in the North Idaho panhandle. The farm has been practicing organic growing for over 20 years under the mentorship of organic farming pioneer David Ronniger. It raises multiple varieties of garlic across three farms: a North Idaho home farm, a Baja California farm that produces purple soft-neck ajo morado, and an Argentine farm. Products include culinary garlic, seed garlic, garlic braids in Mediterranean and American styles, black garlic, garlic powder and chips, onions, shallots, and honey. A Garlic Club annual subscription gives growers and cooks a seasonal supply year-round. Ben Ronniger also offers garlic consultations and hosts interns annually through the WWOOF and ATTRA programs. Allicins Ranch holds certified organic certification through OTCO and is certified by the Real Organic Project. All three farms are worked almost entirely by hand, including planting, weeding, and harvesting. Practices include biodynamic lunar plantings, crop rotation, soil testing, cover crops, trace mineral additions, mycorrhizae, beneficial soil bacteria, microbes, and organically sourced worm castings. Fertilizer comes only from organic sources: manure from the farm's own sheep (Idaho) or goats (Baja), or plant-based materials such as seaweed and kelp. Mulch is sourced from the farm's own pasture or locally organic-sourced material. Water on both the Idaho and Baja farms comes from artesian wells in protected mountain ranges. The Baja farm benefits from seasonal flooding that deposits mineral-rich soil annually. The spring garlic crop is grown in partnership with a rural mountain village, with the farm purchasing the entire harvest at a fair-trade price.
