Private family farm growing heirloom vegetables, grains, and honey in Weslaco, Texas.
The Hour Farm is a private, family-run sustainable farm in Weslaco, Texas, farming since 2011. It grows heirloom and self-pollinating vegetables and grains, including romaine lettuce, spinach, carrots, onions, tomatoes, cucumbers, okra, cilantro, and jalapeño and poblano peppers. The farm also keeps bees and harvests honey. Fresh produce is available through a partnership with the Sentli Center for Regenerative Agriculture, which offers an online ordering market serving the Rio Grande Valley. The farm's name draws on a biblical stewardship story: a faithful servant entrusted with a household, ready for the master's return at any hour.
The Hour Farm plants only heirloom and self-pollinating vegetables and grains. Fertility is built through animal manure applications or by rotating farm animals through areas before planting; no synthetic fertilizers are used. Pest management relies on natural castile soap sprays, with no synthetic pesticides or insecticides. The farm produces its own compost and biochar, which are added to planted rows. On-site bees support pollination throughout the growing area. The farm maintains a seed bank, collects and saves its own seeds, and conducts selective breeding studies to identify plant varieties best suited to the region.
