Family-run grass-fed beef ranch raising Angus, Devon, and Irish Dexter cattle in a farm-to-table model.
Skip Rock Ranch is a family-owned beef operation founded in 2012 by brothers Scott and Lee Wilbeck, whose family has farmed and ranched in Texas since the 1830s. The ranch raises grass-fed Angus, Devon, and Irish Dexter cattle and sells beef in whole, half, and quarter steer shares, as well as ground beef and primal ground beef. Calves are born on the ranch, and select Irish Dexter steers are also sourced from reputable ranches and raised with the herd. When steers reach 24 to 30 months of age, buyers can have their beef custom butchered to order. The operation runs on a reservation model, with periodic butcher runs scheduled through the year. Learn more on their About Page.
Skip Rock Ranch raises its herd exclusively on grass, with no added hormones, steroids, or antibiotics at any stage. Devon bulls and Angus/Devon cross cows make up the core breeding stock, with Irish Dexter steers added and raised on grass and their mothers' milk from the start. Cattle graze open pastures and are managed using low-stress livestock handling techniques based on the work of animal behaviorists Temple Grandin and Bud Williams. Beef is processed at Dziuk's Meat Market in Castroville, Texas, a small independent butcher shop, where each order is custom cut.
