Registered Scottish Highland cattle farm selling grass-fed beef and breeding stock in central Alabama.
Red Briar Farm raises registered Scottish Highland cattle at the base of the Cheaha mountains in central Alabama. The farm offers beef by the whole, half, or quarter carcass, as well as box-meat shares when available. It also sells registered breeding stock, including bulls, cows, and calves, suited for herd building, genetic improvement, and grass finishing. Highland cattle are slow-maturing, which the farm notes produces flavorful, succulent beef. Steers are not harvested until at least two years of age to allow for full flavor development. Tours of the farm are available by appointment. Learn more on their About Page.
Red Briar Farm's cattle are 100% grass-fed and finished on wide-open pastures of mixed native grasses, clover, and fescue. Free-flowing, spring-based streams supply their water. The herd receives no antibiotics, no hormones, and no grain. During the winter months when pastures are dormant, the cattle receive hay produced and stored on the farm itself. Occasional treats are used only to bring animals in for vaccines and health checks. The farm harvests at the end of the spring and fall growing seasons, finding that beef has the best flavor after the cattle have grazed on the sweetest grasses and clovers. Animals are transported a very short distance by farm staff, then humanely slaughtered and butchered under USDA supervision. Beef is dry-aged for 10 to 14 days, custom cut to the buyer's specifications, vacuum sealed, and frozen.
