Craft bakery specializing in hand-shaped sourdough breads, viennoiserie, and pastries.
Prager Brothers Artisan Breads is a craft bakery founded by brothers Clinton and Louie Prager, who grew up in Carlsbad and built the business around traditional, hand-shaped bread making. The bakery produces a wide range of sourdoughs, whole-grain loaves, French baguettes, croissants, danishes, morning buns, cookies, cakes, bagels, flatbreads, and sandwiches. Loaves are baked on the stone surface of a European-made oven. Beyond the retail stores, Prager Brothers also sells at local farmers' markets and offers pizza and coffee at its Carlsbad location. Customers can order online with advance notice, with pickup available at the Carlsbad, Encinitas, and San Diego stores. Learn more on their About Page.
Prager Brothers uses mainly organic ingredients across its product line, a choice the bakery connects to the environmental and animal welfare benefits of organic farming. Grains are sourced from U.S. farms and include ancient varieties such as spelt, rye, buckwheat, teff, and millet. Sourdough breads are leavened with a natural leaven (wild yeast starter) and undergo a long, multi-day fermentation before baking. All shaping is done by hand; the only step not performed by hand is the initial mixing. Filtered water is used throughout. Bread preparation begins the day before baking, with the leaven fermenting first, followed by a long dough fermentation, hand-scaling, hand-shaping, and proofing before the loaves go into the stone-surface oven.
