Indoor specialty mushroom farm growing rare and gourmet varieties for chefs and home cooks.
Play of Sunlight Mushrooms is an indoor specialty mushroom farm founded in Tallahassee in 2014 by musicians Josh Saul and Tyler Lee. Co-owner Kyle Jackson joined during the pandemic to help grow the operation into a statewide specialty mushroom farm. The farm grows a wide range of gourmet and rare species, including Black Pearl Oyster, Blue Oyster, Chestnut, Gold Oyster, Lion's Mane, Phoenix Oyster, Pioppino, and Maitake. In addition to fresh mushrooms, Play of Sunlight offers mushroom powders, grow kits for home use, and hands-on workshops. The farm supplies restaurants directly and also sells through retail channels across North and Central Florida. Learn more on their About Page.
Play of Sunlight Mushrooms operates a state-of-the-art indoor facility with precise environmental controls, allowing for year-round crop production. Its philosophy centers on quality over yield, with a focus on growing rare and difficult-to-cultivate species. The farm runs weekly delivery routes through major metros of North and Central Florida and works directly with chefs rather than using a traditional distribution model, cutting out middlemen and allowing crops to be grown to each chef's specific needs.
