Colorado grass-fed and grass-finished beef, sold by the whole, half, quarter, and cut
Oswald Cattle Company is a family-run cattle ranch that has been selling natural, grass-fed beef directly to consumers since 1999. The ranch itself has been in the family for more than 60 years, with ranching roots in the area going back to the late 1800s. Oswald raises its cattle from birth to finish on the same land, selling wholes, halves, quarters, ground beef, and a selection of grilling steaks including rib-eye, T-bone, and sirloin. Whole, half, and quarter orders are filled in the fall; ground beef and select cuts are kept in supply year-round. All yearling calves are ultrasounded for tenderness, rib-eye shape, and intramuscular fat percentage, and only those that meet the ranch's criteria are selected. Oswald's beef is all-natural, antibiotic-free, and grass-fed and grass-finished. Animals are born, raised, and finished on the ranch, and are a minimum of 24 months of age at processing. The ranch uses a rotational grazing system, moving the herd to a fresh pasture at least once daily to allow grazed plants adequate rest and recovery time. The lower winter range runs through a 10-pasture rotation across a mix of federal and private lands. The upper summer unit is divided into as many as 100 pastures using a combination of temporary and permanent electric fencing. The ranch monitors land health yearly at 11 sites using the LandEKG system, tracking plant growth, ground cover, and forage diversity. Animals are processed by a small family-owned business in Elizabeth, Colorado, hung a minimum of 21 days for flavor and tenderness, and wrapped in plastic and sturdy freezer paper.
