Neon Armadillo is a Texas BBQ and Tex-Mex restaurant set in the Texas Hill Country. The menu spans smoked meats, burgers, bowls, salads, enchiladas, and shareables, all built around bold, comforting flavors. Smoked proteins, including brisket, lamb carnitas, pulled pork, and chicken, are cooked low and slow over Texas Post Oak. The space is designed for families, with a large playscape for kids, a stage for live music, and TVs for watching sports. Catering and events are available, and to-go orders can be placed online. The kitchen is led by Operating Partner Adam Puskorius.

Neon Armadillo sources regenerative, grass-fed meats and produce from sustainable, organic farms in the region like Force of Nature. Beef used in burgers, hot dogs, and loaded menu items comes from Force of Nature, a regenerative brand. Produce includes organic kale and Buena Tierra Farms Yukon Gold potatoes, and butter lettuce is sourced from Crisp Farms. The restaurant is 100% seed-oil-free, frying everything, including tortilla chips and sides, in Texas beef tallow instead of vegetable or seed oils. Corn tortilla chips are gluten-free. Salsas are made in-house, and jalapenos are house-pickled.
