Family-run sugarhouse and microdairy producing maple syrup, raw milk, and homemade ice cream in New Hampshire.
Matras Maple Sugarhouse & Dairy is a family-run operation in Pittsfield, New Hampshire, started by brothers Willie and Asa Matras in 2002 with 20 taps and a homemade setup. Today it operates roughly 2,100 taps across sugarbushes in three towns, producing several hundred gallons of maple syrup each season. The sugarhouse, built in 2010, doubles as a year-round farm stand selling maple syrup in a wide range of sizes and forms, including maple cream, maple candy, and maple sugar. Willie and his wife Lindsay added a microdairy to the operation in 2021, supplying raw milk through a CSA-style weekly pickup program and homemade ice cream made from the farm's own raw milk and maple syrup. Maple sap is boiled on a wood-fired evaporator measuring two-and-a-half by eight feet. Before boiling, sap passes through a reverse osmosis machine that removes 50 to 75 percent of the water, and a steam-away hood over the evaporator pre-heats the sap on the way in. Two of the largest sugarbushes use vacuum systems to increase sap yield. Roughly 50 taps are traditional old-fashioned buckets. The dairy herd is described as grass-based, with the cows fed top-quality grass-based feed and kept on pasture. Raw milk is sold directly to customers through a CSA-style weekly pickup at the sugarhouse. The farm also carries organic milk and cow's milk soap made by affiliated family producers.
