Italian-style farmstead cheese made from Jersey cow milk: mozzarella, raw milk latteria, ricotta, and seasonal varieties.
Lira Rossa Artisan Cheese is a farmstead Italian creamery operating since 2016, situated inside the Four E Dairy, a fourth-generation, Czech heritage dairy farm. Every batch is made by hand at the farm using only Jersey cow milk from that same farm. We make a variety of traditional Italian cheeses that shift with the season and demand. Core offerings include mozzarella, Latteria (our signature alpine-style cheese), fresh ricotta, and pecan-smoked ricotta. Seasonal varieties have included caciotta, robiola, stracchino, a camembert-style bloomy rind, and Moultonzola, our Texas blue cheese. Our ricotta is made from the whey of the latteria cheese.
Every batch of cheese is made by hand at the farm using only Jersey cow milk sourced from the Four E Dairy, where the creamery is located directly next to the milk parlor. The Latteria, our signature cheese, is made with raw milk and aged between 2 and 12 months. Smoked ricotta is smoked with pecan. Our recipes are rooted in Italian tradition and adapted to the conditions of the Texas farm. Cheese availability varies by season and demand.
