Jinx Bread is a bakery founded in Austin by Jack Holt, a former tech executive and Marine infantry officer who turned to bread-baking during the pandemic. Every loaf is made with just three ingredients: heirloom wheat, a natural leaven (sourdough starter), and a well-fired crust. All breads are free from sugar, seeds, nuts, dairy, and artificial sourdough flavoring. Jinx bread is available at the Barton Creek Farmers' Market on Saturdays from 9 to 1, at select restaurants in the greater Austin area, and via online pre-order. The name comes from Jinx Avenue, where the bakery got its start.
Jinx Bread uses only natural leavening, which the bakery calls a sourdough starter or levain, made from flour, water, and the microflora found in wheat bran. No commercial yeast is used in any loaf. The bakery states that naturally leavened bread produces a significantly lower glycemic response than bread made with baker's yeast, making it more digestible for people who bloat easily or manage blood sugar. Heirloom wheat is the grain of choice in every bread, and the bakery does not add sugar, seeds, nuts, dairy, or artificial sourdough flavoring to any product.
