A2A2 raw milk, small-batch dairy, farmhouse baking, and farm-fresh eggs from a family Jersey farm.
Irish Acres Farm is a small-acreage family farm in Brooksville, Florida, run by Mark and Oksana, who bring old-world traditions of hospitality and respect for the land to everything they raise and prepare. The farm is home to Jersey cows, free-ranging chickens, gardens, and a farmhouse bakery. Its Jersey cows produce A2A2 raw milk, which becomes a range of small-batch dairy products including heavy cream, butter, ghee, kefir, yogurt, cottage cheese, cream cheese, clotted cream, farmhouse cheese, and ice cream. Oksana's farmhouse kitchen turns out naturally fermented sourdough bread, Irish soda bread, scones, batch bread, and burger buns. The farm's hens supply fresh eggs. All products are made and collected on site; nothing is shipped. Visitors are encouraged to call ahead to ask what is available before making the trip. Learn more on their About Page.
Irish Acres Farm describes itself as grass farmers first, with healthy pasture as the foundation of its dairy operation. The Jersey cows graze the farm's pastures, and their milk is processed into small-batch dairy products on site. The farm emphasizes small quantities and personal, hands-on work rather than large commercial production. Oksana prepares sourdough breads using natural fermentation in the farmhouse kitchen. Chickens described as free-ranging supply the farm's eggs. All products are made and gathered at Irish Acres; the farm does not ship and does not sell through outside retail channels.
