Il Fiorello Olive Oil

Il Fiorello produces oil from its own certified organic groves. Its mill is a state-of-the-art continuous system produced by Gruppo Pieralisi, described on the business's own pages as one of only about 50 olive mills in the United States. The mill operates as a closed system with minimal oxygen contact, using a two-phase extraction process with both a decanter and a separator. The mill is certified organic, and organic growers using its custom milling service are accommodated accordingly. Il Fiorello harvests its olives at approximately 70% green and 30% black, a ratio the business states gives a balance of fruit, aroma, bitterness, and pungency. Its extra virgin olive oils carry California Extra Virgin Certification, which requires a Master Taste Panel evaluation and a chemistry analysis. In addition to its own production, the business mills for more than 200 private growers through custom private batches and seasonal community milling days.
