Water-powered stone-ground flour mill: whole wheat, cornmeal, grits, rye, and heritage grains, milled weekly in Waco.
Homestead Gristmill is a working flour mill in Waco, Texas, established in 2003. We mill wheat, corn, rye, and other grains on granite stones and sell fresh flour, cornmeal, grits, baking mixes, and pantry goods through our mill store and online shop. The mill began as an eighteenth-century watermill in Long Valley, New Jersey; its timber frame and machinery were later moved and rebuilt in Central Texas, and the water wheel turns here today. Our lineup includes whole wheat, spelt, einkorn, rye, oat, and pastry flour, plus stone-ground cornmeal, polenta, and grits. We serve home bakers, restaurants, bakeries, and retail partners, and customers can shop in the mill store (open Monday through Saturday) or order for shipping.
We mill in small batches every week using granite millstones, which work more slowly than industrial roller mills and keep the bran, germ, aroma, and character of the grain intact. Our flour contains no bromate, no bleaching, no enrichment, and no fillers. The whole kernel goes through the stones so everything stays in the bag. We choose grains for flavor and baking performance, and we mill on a regular schedule so flour ships weeks from the stone rather than months from a warehouse. The mill is water-powered, driven by a rebuilt water wheel that continues the same function the original eighteenth-century mill was built for.
