Hewn Bakery

Hewn bakes breads without commercial yeast, preservatives, conditioners, or additives, using only flour, water, salt, and a long natural fermentation of about 20 hours per loaf. Its organic, stone-milled flours come mainly from Illinois and Wisconsin farms. Grain partners include Janie's Farm and Mill, which grows certified organic grains in east central Illinois using crop rotation and cover cropping; Meadows Lark Farm and Mill, which supplies freshly milled flour retaining much of the bran and germ; and Hazzard Free Farm, which grows heirloom and open-pollinated grains without treated or GMO seeds, chemical pesticides, or herbicides. Hewn also sources dairy from Kilgus Farmstead, a multi-generational Illinois dairy that pasture-raises Jersey cows, and produce from Mick Klüg Farms, a family-run fruit and vegetable operation. Heritage and modern heritage grains baked at Hewn include Turkey Red, Red Fife, Spelt, and Evanston Red.
