Folsom Farm Beef is a family-owned operation in Rexburg, Idaho, where JD and Micah Folsom raise cattle from conception through harvest on their own land. JD is a cattle veterinarian who oversees the herd's genetics, health, and day-to-day care. The farm sells individual cuts (including steaks, roasts, and ground beef), curated beef boxes and bundles, bulk shares (whole, half, or quarter cow), beef snack sticks, tallow products, and cheese. A farm store is open weekdays and Saturday mornings for local shoppers. Subscription boxes are also available for recurring orders.
Folsom Farm Beef raises a Red Angus and Simmental cross selected for marbling and performance in Southeast Idaho. All cattle are born and raised on the farm's pastures, where they graze on native grass for the first year of life. For the final five to six months before harvest, the animals are finished on a ration of hay, corn silage, Idaho potatoes, and flaked corn, all locally sourced. No growth hormones of any kind are used. Animals that receive antibiotics for illness are flagged and do not enter the meat program. The herd is designated Verified Natural, and harvesting takes place under USDA inspection. Summers are spent on pasture at the Hairpin Ranch in Jackson, Montana, which the Folsom family manages. Cattle are harvested at approximately 18 months of age, at peak condition.
