Specialty flour mill offering organic and conventional flours, whole grains, and in-person baking classes.
Central Milling has been milling flour since 1867, making it one of the longest continuously operating mills in the country. Its Petaluma location, housed within Keith Giusto Bakery Supply, serves both home bakers and professional bakeries with a large selection of specialty flours and whole grains. Product lines include Central Milling Organic, the conventional Red Rose Flour brand (in production since 1919), and a co-developed pizza flour with 13-time World Pizza Cup Champion Tony Gemignani. Varieties span bread, all-purpose, pastry, whole wheat, rye, spelt, einkorn, khorasan, durum, buckwheat, and more, available in retail and bulk sizes. The Petaluma site also houses the Artisan Baking Center, a hands-on culinary education facility offering in-person classes and workshops on topics from bread baking and sourdough to fermentation and pastry.
Central Milling works directly with farmers to source grains selected for flavor, color, and baking performance. When grains arrive at the mill, they are laser sorted, cleaned, and stored before being milled using a slow, cool process designed to preserve baking characteristics. Every product is bake-tested for performance before leaving the mill, and each lot can be traced back to the farm where it was grown. The organic product line is sold under the Central Milling Organic brand; the Red Rose line is described by the company as conventional and non-organic. Custom grain blends and proprietary specifications are available for commercial customers.
