A bagel shop milling its own whole-grain flour for sourdough bagels, sandwiches, and coffee.
The Bagel Mill is a bagel shop in Petaluma, CA, owned by Glenda Dougherty Manning, whose time in New York City sparked a love for boiled, New York-style bagels. The business began in 2017 as Red Dog Baking Co., selling whole-grain baked goods at local farmers markets before narrowing its focus to bagels and opening a dedicated shop. The menu spans more than a dozen bagel varieties, from plain and everything to marble rye, jalapeño cheddar, and asiago, served as-is or built into sandwiches like an open-faced lox, a California egg and cheese, and a pastrami reuben. Cream cheeses, seasonal specials, and coffee from Land and Water Coffee round out the menu. Learn more on their About Page.
The Bagel Mill mills its own flour on-site using a stone flour mill made by New American Stone Mills in Vermont. The mill grinds whole wheat slowly between two millstones at low temperature, retaining the bran, germ, and endosperm of the wheat berry. The freshly milled flour is 100% whole wheat and is used the same day to feed the bakery's sourdough starter. Each batch of dough combines sourdough starter, water, freshly milled flour, unrefined salt, and malted barley flour. After an initial proof, the shaped bagels cold-retard in the refrigerator for 18 hours before bakers boil, top, and bake them, a process that takes over 36 hours from start to finish. The Bagel Mill uses local and organic produce, dairy, and grains.
