Award-winning goat cheese creamery, making a range of aged and fresh chèvre since 1988.
Capriole is a goat cheese creamery founded by Judy Schad on an 80-acre southern Indiana hill farm, where commercial cheesemaking began in 1988. The creamery produces a range of goat cheeses, from fresh chèvre to aged and bloomy-rind varieties, including Wabash Cannonball, Sofia, Mont St. Francis, O'Banon, Piper's Pyramide, Flora, Julianna, Old Kentucky Tomme, and Tea Rose. Cheese curds are ladled by hand from 400-gallon vats. Capriole's cheeses are carried at cheese shops, restaurants, and markets across the country, and are also available through its online store. The creamery is not open to the public. Learn more on their About Page.
Capriole sources its goat milk from Indiana farm partners rather than maintaining its own herd, a transition made to concentrate fully on cheesemaking quality and consistency. The 80-acre farm property is protected under a conservation easement established in partnership with Sycamore Land Trust, ensuring the land remains as conservation land and farmland permanently.
