Bellwether Farms is a family-owned creamery founded in 1986 in the rolling hills of Sonoma County. It produces sheep's milk yogurt, A2 Organic Whole Milk Yogurt, fresh and aged sheep's milk cheeses, Whole Milk Basket Ricotta, and Crème Fraîche. The creamery built its reputation on a whole-milk approach: yogurts are made in small batches from unaltered whole milk, with no added powdered milk, fillers, or stabilizers. Sheep's milk products gained early recognition at farmers' markets and among Bay Area chefs, and the creamery has since grown to national distribution. Owner Liam Callahan oversees production, and the Bellwether Farms Foundation pledges one percent of sales to hunger relief and food education organizations.
Bellwether Farms makes its yogurts in small batches from whole milk, without draining extra whey or adding powders, colors, or stabilizers. Its A2 Organic Whole Milk Yogurt is made from organic milk sourced from Jersey cows on neighboring Sonoma County farms; those cows have been DNA-tested to confirm they produce only A2 beta-casein protein. The Whole Milk Basket Ricotta is cultured and then slowly heated in small kettles until curds form, and is sold in its draining basket. The Crème Fraîche is made from pure, local heavy cream. All products are made with pasteurized milk. Aged cheeses use traditional animal rennet; fresh sheep cheese logs use vegetarian rennet. The creamery is not currently able to guarantee that its sheep feed is always GMO-free, though it states it is actively working to source more organic and non-GMO feed.
