Working goat dairy farm with award-winning farmstead cheeses, an on-site restaurant, and a CSA.
Prairie Fruits Farm & Creamery is a working goat dairy farm founded in 2004 on land that was once Illinois tallgrass prairie. The farm produces award-winning fresh and aged farmstead goat cheeses in its on-site creamery, where milk travels just steps from the herd. Caprae, the farm's on-site restaurant led by Executive Chef Garron Sanchez, serves a seasonal a la carte menu, a 5-course chef's dinner, weekend brunch, and a Tuesday taco night. Beyond dining, Prairie Fruits Farm & Creamery offers a weekly CSA (fresh bread paired with cheese), a farm store, a Cheese Club subscription, farm stays, farm tours, and regular classes and events. The farm is stewarded by Lauren and Jeffrey Brokish and is part of the Salt Fork Food Works regional food network. Learn more on their About Page.
Prairie Fruits Farm & Creamery raises a herd of nearly one hundred dairy goats on rotational pastures, where the animals browse grasses, legumes, and shrubs. The farm is certified Animal Welfare Approved by A Greener World, which requires animals to be raised on pasture and allowed to express natural behaviors. Regenerative practices on the farm include rotational grazing to rebuild soil fertility, perennial plant systems such as fruit orchards and native prairie plantings, and pollinator habitat to increase biodiversity. All milk used in the creamery is produced on-site, so each cheese reflects the season and the pasture. The Caprae restaurant draws on the farm's own produce and cheeses, as well as ingredients sourced from neighboring farms. Organic materials from the farm cycle back to the land as part of the broader Salt Fork Food Works ecosystem.
