Organic sourdough bakery and millhouse baking with stone-ground, locally grown grain.
Mountain Oven Organic Bakery & Millhouse is an organic bakery and millhouse in Paonia, Colorado, run by Chris Sullivan and Dana Whitcomb. Founded in 2010 in Crested Butte, it relocated to Paonia to put down roots in a valley with one of the highest concentrations of organic farms in the state. The bakery produces sourdough breads, pastries, and fresh-milled flour, distributed through weekly in-house events, farmers markets, regional wholesale, and catering. Breads are hand-shaped, canvas-risen, and baked on a stone hearth using whole grain flours ground in-house daily and fermented with Mama, a high-altitude sourdough culture. Pastries feature seasonal fruits, herbs, and edible flowers sourced from the North Fork Valley. Fresh-milled flour is also available for home bakers and wholesale accounts. Learn more on their About Page.
Mountain Oven mills its whole grain flours in-house daily on a 48-inch New American Stonemill. All sourcing is organic; the bakery buys directly from farmers whenever possible, prioritizing growers in the North Fork Valley who farm to organic standards or better. For ingredients sourced outside the region, it uses Certified Organic products whenever possible. (corn, wheat), among others. Local farms also supply orchard fruits, vegetables, herbs, eggs, pork, and chicken. The business grows its own herbs and flowers for bakery use. It also stewards the Paonia Community Kitchen, a shared commercial kitchen space within its 6,000 sq ft facility, supporting local food producers.
