Pasture-raised bison and grass-fed meats from a multi-generation Texas ranch family.
Katerra Exotics is a family-run ranch producing pasture-raised bison and a range of other meats, including beef, chicken, goat, lamb, and other exotics. The business name blends "Katy," the city where the family lives, with "terra," Latin for land. The Bierschwale family has been active in the buffalo industry since 1980, when patriarch Roy acquired his first herd on his Texas ranch. Today, Patrick and his father Pat operate two ranches: the original production herd ranch in the Frio Canyon near Leakey, TX, and a newer ranch on the Katy prairie where the family lives full time. Katerra Exotics sells its meats at Houston-area farmers markets, through a ranch store on the Katy prairie, and online. Learn more on their About Page.
Katerra Exotics raises its bison on two Texas ranches, where the animals graze freely on pasture grasses. Weaned calves from the Hill Country ranch in Leakey are brought to the Katy prairie ranch to graze on rich prairie grasses for a couple of years, with animals harvested at the prime meat-producing age of two to three years. The operation keeps animal stress low by working the herd as little as possible and allowing free grazing. Bison are never given growth hormones or antibiotics, and the pastures are never treated with fertilizers or pesticides. Animals are processed locally.
