Independently owned bakery specializing in hearth-baked breads, viennoiserie, and pastries.
Independent Baking Co. is a small, independently owned bakery located in Athens's historic Five Points neighborhood. It produces hearth-baked loaves of bread and pastries for its retail shop, and also supplies products to restaurants and coffee shops around Athens. Owner and baker Kevin Scollo brings over 15 years of experience from kitchens and bakeries including The NoMad Hotel, Bien Cuit Bakery, and The Great Northern Food Hall. Head baker Marcos Muñoz trained at Dominique Ansel Bakery, Great Northern Food Hall, and Blue Hill at Stone Barns. The bread menu spans baguettes, naturally leavened country loaves, ryes, spelt, semolina, and challah, with many varieties rotating by day of the week. Viennoiserie, sweets, scones, sandwiches, and espresso drinks round out the offerings.
Independent Baking Co. mills all of its whole grain flour in-house at a separate milling facility, using a Zentrofan mill with a ring-shaped basalt stone from Germany and a granite stone mill made by New American Stone Mills in Vermont. The whole grain flour is stone-ground from organic grain sourced from Heartland Mill in Marienthal, Kansas. The bakery uses natural fermentation with a maintained sourdough starter alongside classic commercial yeast-leavened techniques. Breads are made with a range of flours including whole rye, whole wheat, whole spelt, and durum, as well as unbleached organic wheat flour. House-milled whole wheat flour, whole rye flour, and heirloom corn grits are also sold in the bakery's pantry.
