First-generation pasture-to-plate farm raising heritage breed pork, pastured eggs, beef, and chicken, with a farm store and on-farm classes.
Hillbilly Nutrition is a first-generation pasture-to-plate farm and farm store founded in 2012 by Tracy and Gary McCoy. The farm raises heritage breed Red Wattle and Old Spots cross pigs and pastured eggs on its Waxahachie property, where it has operated since moving to the farmstead in 2017. It also sources grass-fed, grass-finished beef and pastured chicken from partner farms in Texas. Cuts are sold by the individual piece or by the half or whole animal. Beyond meat, the farm store carries a broader range of products including sourdough, raw honey, and cooking and baking goods. Hillbilly Nutrition also runs a Farm and Garden School, offering on-farm classes and online resources for gardeners and home cooks. Learn more on their About Page.
Hillbilly Nutrition's pigs are a cross between Red Wattle and Old Spots heritage breeds, raised on pasture with access to shelter huts, fresh water, mud pits, and tree lines. When not foraging on grasses and roots, the pigs are supplemented with a locally milled fresh pellet feed that is Non-GMO, corn-free, and soy-free. All animals on the farm are raised free from hormones, antibiotics, and vaccines. Pork seasonings contain no nitrates or nitrites, no dextrose, no filler, and are gluten-free and dairy-free. The farm's pastures are kept free from GMOs, pesticides, and herbicides. Pigs are rotated between pastures to support land health and natural parasite management. Pork is processed at a facility approximately 45 minutes from the farm and is sold by the cut, or by the half or whole animal.
